Cheat’s Pie

This is the easiest pie to use up your left overs- pick and choose your ingredients.

Ingredients

  • flat bread
  • left over meat- chicken, bacon, anything cooked then chopped
  • veges like tomato, onion, spinach
  • milk
  • eggs
  • cheese- grated, ricotta, philadelphia- what ever you have in the fridge
  • herbs- fresh or dried
  • salt, pepper

Method

  1. Lightly grease a small baking dish then line with a couple of flat breads like so:

2. I then layered with my veges and meat and a bit of chopped up cheese.

3. I only had a couple of eggs left, not quite enough, but the amount you use will depend on the size of your dish. Whisk the eggs with a slosh of milk (if you don’t have milk just leave out) and some dried or fresh herbs- I would like to have added some ricotta or whipped philadelphia cheese but I didn’t have any. Season with salt and pepper to taste. Pour over the top of pie. Sprinkle a bit of extra cheese on top.

4. Bake for about 30 min at 180 degrees C or until golden and set.
